Delmonico's was always a family affair. My sister Nicoletta was indeed "daddy's little girl." Nicoletta was often in the kitchen with our father, cooking up a storm. Her love of cooking and entertaining is part of her DNA as much as it is mine. We had so many wonderful expericences growing up at Delmonico's both in New York and Greenwich, Connecticut. This pasta dish is one of my sister's signature disehes and one of my favorites. Served on a dish from the Delmonico's Greenwich, CT location. Poached Pears were one of the most popular desserts served at Oscar's Delmonico downtown, so naturally Oscar brought this recpie uptown when he opened 'Oscar's' at 146 East Fifty-Sixth Street, New York in 1941. Today, 146 East 56th Street is Bumble and Bumble. The pears are served on a Tiffany & Company cobalt blue dish from with gold rim, from Oscar's Delmonico. My mother still makes these poached pears today. The recpie can be found on page 110 of The Delmonico Way
